Puba flour, also known as water flour, 1 kg package. The cassava is soaked to ferment before roasting, which is where it gets the coarser grain, yellowish color, and tangy aroma that distinguish it from regular cassava flour. It is the flour of the North and Northeast: it accompanies açaí, thickens fish stew (pirão), and is sprinkled over fish, beans, and feijoada.
